The restaurant is inside Palazzo Doglio, the new luxury hotel in the heart of Cagliari, just a few minutes walking from the historical town centre. The interior of the palace is distinguished by elegant design and reorganised so to respect the safety normative. Great passion, experience, creativity and attention to the value of local products are what distinguish Executive chef Alessandro Cocco, head chef at the Osteria del Forte.
Alessandro Cocco is originally from Rome, he built his career at Forte Village surrounded by great international chefs like Gordon Ramsay, chef and television celebrity, the three Michelin starred chef Heinz Beck who is also considered one of the most influential cooks in the world.
Chef Cocco has had experience in many restaurants of international importance, including Hostellerie du Pas de l’Ours, Falken restaurant and the Bellevue run by Chef Vissani.
The young chef brings back to life ancients recipes like that of traditionally made homemade pasta with a modern approach, he values seasonal and local products.
The Osteria del Forte stirs up the scent and flavour of each dish by joining it to the art of mixology with a rich list of cocktails in the American bar and “i classici a modo nostro” – the traditional ones made our way, prepared by Barman Marco Madeddu.
During the past years, Marco Madeddu has worked at the renowned Claridge’s Hotel in the centre of London, and in venues which could be nicknamed with an antonomasia “the London cathedrals of cocktails”, including the Soho House and the Social Company in Pollen Street Social (Michelin starred restaurant and cocktail bar).
