Osteria del Forte brings Michelin stars to Cagliari
Osteria del Forte at Palazzo Doglio continues to bring to Sardinia some of the most important names in Italian and international cuisine. Over the years it has hosted several prominent personalities, such as Heinz Beck, Andrea Berton and Massimiliano Mascia, but also Giuseppe Mancino, Edoardo Fumagalli, Alessandro Breda and Fabio Pisani. And now the chefs Carlo Cracco and Cristina Bowerman are the stars of the new edition of Notti Stellate, the gastronomic events that celebrate signature cuisine.
Carlo Cracco: iconic dishes and a special wine selection
The gourmet appointments of Notti Stellate at the Osteria del Forte brought back to Cagliari for the second time the extraordinary cuisine of Carlo Cracco.
He is one of the most internationally appreciated Italian chefs, and was the protagonist of two exclusive evenings on Monday 20 and Tuesday 21, June 2022. He prepared some of the dishes that made him famous all over the world, accompanied from a special wine selection. In fact, for the first time in Sardinia, the wines of the Vista Mare farm located in Sant’Arcangelo di Romagna, Rimini, were presented. The chef and his wife, Rosa, bought the farm in 2019 with the aim of creating a cultivation pole and spreading a zero waste approach, which is particularly dear to them. The Organic Amaro Bianco, the Organic Gin and the Organic Limoncello from the Cracco Distillati line (a project born two years ago) were also presented.
Cristina Bowerman at the Osteria del Forte: the appointment is for July
The third appointment with Notti Stellate on July 12, at 8:30 pm, brings the famous chef Cristina Bowerman, 1 Michelin star since 2010 and 3 Gambero Rosso forks, to the Osteria del Forte. Bowerman’s cuisine has been defined as a cultural crossing that mixes traditions, cultures, memories and places.
The gala dinner on July 12, in Cagliari, will be no exception.
The menu will be a journey that combines the chef’s experiences with the Sardinian territory. An exemplary dish will be the Carloforte tuna fillet seared with local thistle honey, black and white sesame, Riso Buono Artemide rice sauce in dashi, grilled San Sperate peaches in kimchi. In addition, celeriac pizza with sesame spiced oil, buds and flowers, and Felicetti Spaghetti with clams, miso, sea lettuce and sea fennel. Finally, condensed milk with coffee jelly, sandy almonds and Baileys ice cream.
The chef has always tried to represent a role model for women in catering, a value that was also recognized on the occasion of TEDxMilano Women and TedXaubg. Cristina Bowerman is also very attentive to sustainability through the enhancement of local producers and product logistics. In fact, she was recently included in the global selection of Green Initiative drawn up by the Michelin Guide. Moreover, she participated as a protagonist in the largest ACTION AID campaign in 2015. She is also among the ten founders of the Fiorano For Kids organization, for research on the therapeutic role of diet in the treatment of childhood epilepsy.
