The project Maiori pizzeria was born in February 2021 with the idea of bringing the perfect pairing of tastes and aromas that see the Neapolitan pizza and drinks protagonists to Cagliari, in the magical setting of the luxury hotel of Palazzo Doglio.
The use of the best Campania and Sardinian raw ingredients, authentic products and slow food products and the constant search for new flavours, combined with traditional techniques of pizza production, makes for Maiori to be a temple of Neapolitan pizza in the heart of the Sardinian capital.
The team of Maiori Cagliari Contemporary Cocktails & Traditional Pizza is led by the young and talented pizza maker from Campania Emanuele Riemma, and bartender Antonio Varotto who likes to call himself the “alcoholic consultant”.
Born in 1994, Emanuele Riemma trained with the best Neapolitan masters and in 2019, alongside winning the “creativity” award, he began working on a method of his own: the Riemma method, the result of much study, commitment and a good dose of curiosity. The flour used by Riemma follows the needs of a diabetic clientele and with metabolic syndrome: in fact, it has a reduced glycemic impact and was approved by the Umberto Veronesi Foundation.
Six months after opening, thanks to the commitment and tenacity of Riemma, Maiori pizzeria ranked 74th among the best pizzerias in the world, according to the classic of Guide to the Best Pizzeria in the World. In the explanatory statement published on the guide’s website, edited by Barbara Guerra, Albert Sapere and Luciano Pignataro, the classic pizzas (from the daisy to the marinara passing through the buffalo) are described as some of the best in Sardinia thanks to the use of high-quality ingredients that enrich a soft pizza, well leavened, very digestible and strong in flavour despite the lightness. The credit is due to Emanuele Riemma who, according to the opinion of the experts, is a successful pizza maker of great talent and brings a 100% Neapolitan and traditional product to the Sardinian capital.
To complete the pleasant dining experience and the impeccable service is the American Bar managed excellently by Antonio Varotto trained at some of the best Italian hotels and clubs. For over twenty years, professionalism, charisma and passion have distinguished the path of Varotto who has included the research of seasonality into his trademark.

Francesco Brunofadda, founder and co-curator of Spirito Autoctono, on the occasion of the Florence Cocktail Week 2021 explained the reasons that allowed MAIORI pizzeria to win the prestigious award: “Despite the combination of spirits and pizza is excellent, it is a habit not yet widespread in Italy. Pizzeria Maiori in Cagliari is brave and forward-looking: the bar run by Antonio Varotto not only manages to dance in unison with the Emanuele Riemma, but would not fail at any specialisation in mixology. The offer is transversal concerning tastes, genres and occasions, managing to cover perfectly every moment of the dining experience”.
